Gluten-free Tigernut Banana Bread

with vanilla ice cream on top

I really like banana bread. Bananas are a natural sweetener, and I tend to like the texture bananas add to anything from smoothies to oatmeal. There are a few articles circulating the web claiming banana bread is something one should not eat because it has too much sugar and fat. My sweeteners are bananas and maple syrup, and I do not use butter. Think of this as a less guilty banana bread.
