Peanut Butter Chocolate Chip Cookies

These cookies are not dry and crunchy. Think soft and chewy chocolate chip cookies. Smaller than fist-sized cookies, great for a delicious snack.
Best part? Gluten-free. Vegan. High in natural protein. A couple tablespoons of maple syrup total used for sweetener.
I usually use organic sprouted brown rice flour rather than white rice flour (either should be fine) which tends to give a slightly different taste. Using only rice flour for cookie flour is not recommended since rice absorbs moisture yielding a drier cookie.
I also use organic creamy peanut butter which might differ in consistency to other creamy peanut butters, but any creamy peanut butter should work just fine. Try to avoid peanut butter with added sugar and oil.
Baking tip: Adding chocolate chips on top of cookie dough while on cookie sheet just prior to putting in oven helps to avert melted chocolate on pan or cookie bottoms.
